buche de noel? [Dec. 16th, 2007|10:14 am]
Cooking and wine and other tight shit

Hey, guys, I could really use your help. Every year, I make a Buche de Noel (Yule Log cake) to go along with my Christmas meal, and I like to mix it up with recipes more interesting/unique than just making a chocolate sheet cake with buttercreme or jam filling.

This year, I'm kind of stumped, but I just bought an awesome new jelly roll pan, and I'm anxious to try it out. I'd really like to do something with orange and/or chestnuts, but Google isn't helping me too much! I also do prefer to frost my cakes, rather than dusting them with confectioner's sugar. If any of you guys have a killer recipe, regardless of whether it contains orange or chestnut (the tastiest one I ever made was extra dark chocolate with white chocolate mousse filling, for example), please let me know! Thanks!

Oh my GOD I just made the best dinner ever.

It's mushrooms, artichoke hearts, sundried tomatoes, roma tomatoes, and garlic with a little bit of basil pesto over spaghetti. It would have worked better with penne I think, but I didn't have that handy.

On a slightly related note, I have a lot of mushrooms left. They're just the generic pre-sliced white button mushroom type. What's good to make with these? (I should also note I'm vegetarian but I still eat dairy.)

i made the most amazing guacamole today.

3 avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
1 roma tomato, seeded and diced
1 clove garlic, minced

put avocado fruit in a big bowl with the lime juice and mix it around so the avocado is evenly coated. add the salt, the cumin, and the cayenne then mash with a potato masher until you get the desired consistency. add the onion, tomato and garlic, then mix.

then, eat it all with blue corn chips and a cold beer.

gimme your delicious marinades! [May. 23rd, 2007|06:52 pm]

rofl_iron
So for my graduation party last weekend I made vegetable kabobs with this delicious marinade:

1/2 c. reduced sodium soy sauce
1/2 c. unsweetened pineapple juice
1/4 c. vegetable oil
1 tbsp. brown sugar
1 tsp. garlic powder
2 tsp. ground ginger
1 tsp. dry mustard
1/4 tsp. freshly ground pepper

Combine ingredients in a saucepan, bring to a boil. Reduce heat and simmer 5 minutes; let cool.

Use 1-2 inch pieces of two/three different colored peppers, a vidalia onion, and pineapple, small mushrooms, and cherry tomatos... toss in a bag with marinade and stick on a skewer. Grill on a medium hot grill for 10ish minutes. OR you can toss them in a deep baking dish and cover with aluminum foil and bake at 300 degrees for 15 minutes.

so ITT I want marinades that are delicious.

Food Blog Review: Kokblog [May. 18th, 2007|01:13 pm]
Cooking and wine and other tight shit
ihatejeffroman
This is one of the best designed food blogs I have seen...it is written by a lady named Johanna Lindvall, who lives in New York but is from Sweden, and it focuses on traditional Scandinavian foods but she writes about any recipes that she likes making. The recipes for liver sausage and rum apple pie sound particularly good. There aren't that many recipes yet, but the ones that are there sound quite good and the webdesign is really well executed. Check it out.

Kokblog(cookblog for those that ignore the painfully obvious and instead concentrate on the word's similarity to "cockblock")

ITT you talk about barbeque and how the season is coming up and ARE YOU PREPARED because I sure am. This summer my roommate will be gone on tour with his band and I am building a monster smoker on our patio that will probably violate all sorts of our complex's HOA rules but I don't care because ribs are better than rules amirite?!

hey look what i made! the assistant manager at my store is leaving us today to go work at a japanese restaurant so i made SUSHI CUPCAKES for her! i am crafty!

they are just vanilla cupcakes (baked without a liner), vanilla frosting, rolled in flaked coconut, with orange sprinkles for the row, fruit by the foot for the seaweed, and pieces of some sort of sour string gummy candy for the "ginger" or crab or whatever you want it to be.

this is my favorite simple dinner meal.

yves meatless lemon herb skewers + marinated asparagus + saffron rice.

to marinate the asparagus, i cut most of the dense stalks off (the bottom part), and put the remaining tops in a tupperware container big enough to handle all off the asparagus. i mixed about a 1/4 cup olive oil with ~2 tea spoon black pepper and ~2 tea spoon salt. i put the lid on it and shook it around to coat the asparagus. while i prepped everything else, i let the asparagus marinate, turning the container over every 5 minutes or so.

the saffron rice usually takes about 16 minutes. ive made saffron rice from scratch and have found that its not any more rewarding than making it from a box, so thats what i do. because really? saffron threads? shits expensive and im not above food from a box. so! saffron rice: make according to directions on the box.

skewers: we've made these a few times in the frying pan and they are okay, but we decided to put them on the grill last night and it blew everything out of the water.

put the skewers on the grill and put the asparagus on a part thats not as hot. brush on some of the left over marinade on the skewers. they dont have a whole lot of fat on them so you have to watch to make sure they dont stick to the grill. turn asparagus and skewers after about 6 minutes, then take them off after 12 total. enjoy!

Here's my famous Snickerdoodle Recipe! I don't know if you know this, but this recipe is kind of a big deal:

Preheat oven to 375.

1 cup shortening
1 1/2 cup sugar
2 eggs
(mix these together first)

2 3/4 c. flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt

1) Add dry ingredients to the sugar/shortening mix.
2) Roll dough into balls the size of small walnuts in a small bowl that contains a mixture of 2 Tbsp of sugar and 2 tsp of cinnamon.
3) Arrange balls on an ungreased sheet and bake 8-11 minutes, no more, no less.

YUM! I promise!

mexicanfood fucks i just got taco bar fixin's so that i can just make a taco anytime i get hungry. which leads to the question, what do you like on tacos? how do you fix them?

personally, i use canned black beans(i'm way too lazy/fridge space conscious to make a big batch of beans at home), corn tortillas(fuck you flour tortilla people...rot in hell), good pepperjack cheese, chorizo if i'm lazy or carne asada if i have the time and money to cook it, and a tomatillo salsa i make that's basically ultimate salsa. it has tomatillos, bell peppers, chiles, onions, tomato, garlic, cilantro, lime juice, and avocado as well as some other things(cayenne, plenty of salt, etc).

Guys I bought a Kitchenaid Artisan mixer this weekend!  I've wanted one for so so long and I finally decided to quick waiting and bought one.

It's black and beautiful.

ITT provide me with delicious recipes for this thing.  I've of course already made the inaugural batch of chocolate chip cookies.  I plan on making some delicious sponge cake later in the week and at some point I will be enjoying some meringues.  More suggestions please!

[Tuneskies |great lake swimmers.]

i just made the best sandwich ever.

i grilled on my griddle pan some zucchini, squash, red onions, green/red/orange bell pepers with some salt, peper, and herbs de provence and then i cut some slices from a fresh baked loaf of 6 grain bread and toasted the sides up on the griddle.
then i added pesto to one side, added my veggies on top and melted some provolone on them, covered the sandwich and placed a smaller skillet on top and smushed it all down.

omg soooooo gooood. the bread was warm and crispy and the whole thing was melty grilled goodness.
and my roommate made some garlic and tuscan white bean soup! what a great food day.

maybe next time i'll try some goat cheese.

im so proud of my sandwich. what's the best sandwich you've ever made?
